Tomato and Basil Bruschetta

Bruschetta is literally one of my most favorite thing on this freaking planet and I am so fired up about this recipe!

Yield: 6 servings

2 pieces of bruschetta with toppings is only 107 calories!


What you'll need:

  • 12 slices of a whole wheat baguette

  • 2 vine-ripened tomatoes, chopped

  • 1/4 cup, chopped fresh basil leaves, plus a few whole leaves for optional garnish

  • 2 tablespoons extra virgin olive oil, divided

  • 1/2 teaspoon salt, divided

  • 1 garlic clove, minced

What you'll need to do:

  1. Preheat oven to 375 degrees F.

  2. Spread slices of bread on a baking sheet.

  3. Drizzle with one tablespoon olive oil and sprinkle with 1/4 teaspoon salt.

  4. Toast for about 5 minutes or until golden and crisp.

  5. Remove from the oven to cool.

  6. Combine the tomatoes, garlic, basil, and remaining olive oil and salt. Garnish with basil leaves, if desired.
