Who doesn't love oatmeal? It leaves you feeling satisfied and keeps you full!
What you'll need:
1/4 cup rolled oats (75)
1/2 cup unsweetened coconut milk (23)
1/4 cup mashed strawberries* (19)
1 tsp vanilla extract (12)
1 packet sweetener (0)
Optional: 1/4 cup coconut yogurt (28)
What you'll need to do:
Combine all the ingredients (except yogurt) in a bowl and mix well. If you plan to eat them cold, microwave covered for 1 or 2 minutes before leaving them in the fridge overnight. If you want them hot, leave them in the fridge overnight and microwave them covered in the morning (or before serving). I always stir mine between 1 minute intervals of microwaving.
This recipe sans yogurt yields about 1 cup/240ml. I highly recommend the addition of the yogurt; it increases the volume and makes the oats deliciously creamy, and adds less than 30 calories to the recipe (brings it up to 157). Add the yogurt only after microwaving, right before you serve. Mix it in and enjoy!
