2.5 cups of this salad is only 136 calories!!! You can really load up on all of this goodness!
However, the recipe does make 4 servings so you will have a lot of salad! Feel free to cut the recipe in half!
What you'll need:
8 cups baby spinach
2 cups strawberries
1/2 cup reduced fat feta cheese (leave out for Paleo)
1/4 cup walnuts, chopped
1/4 cup nonfat plain Greek yogurt (or regular yogurt)
2 tbsp white wine vinegar
1 tbsp olive oil
2 tsp honey (or sugar or Stevia to taste)
1 tsp Dijon mustard
1 tsp poppy seeds
Salt and pepper
What you'll need to do:
Stir together yogurt, white wine vinegar, honey, olive oil, mustard, and poppy seeds to make the dressing. Season with salt and pepper.
Toss the spinach, strawberries, feta cheese, and walnuts with the dressing.
