What you'll need:
2 cups spinach
3 egg whites
1/4 cup rolled oats
1/4 cup unsweetened vanilla almond milk
1/4 tsp. vanilla extract
1/8 tsp. cinnamon
What you'll need to do:
Add all the ingredients to a blender to create the batter. Blend until smooth. Depending on preferences, add Stevia or other sweetener to taste.
Heat a nonstick griddle or pan over medium high heat. Add around 1/8 cup per pancake and cook for about 2-3 minutes until firm. Flip and cook an additional 1-2 minutes. Repeat to cook all pancakes.
