Spiced Spaghetti Squash and Spinach Salad

This one is a doozie, guys. I have literally amazed myself. I feel like I ate a gigantic dinner, and everything in this picture came in at 153 calories.


See, I was really getting sick of zoodles. And sometimes I don't like how much water they give off when you cook them, or try to add other things to them. So I went out on a limb and decided to try the spaghetti squash. My goodness, I'm so happy I did! They feel way more like noodles. By far. And the best part? Scraping the "noodles" out once the squash is cooked. It was the most satisfying experience I have ever had in the kitchen!



What you'll need:

For the spaghetti squash

1 cup spaghetti squash

0.25g shrimp (this was 6 medium shrimp for me)

Garlic powder

Lemon pepper

Cumin

Seasoning salt

Cayenne pepper


For the salad

42.5 g spinach

1 tablespoon diced white onion

1 stalk celery

1/3 diced red bell pepper

1 stick imitation crab meat (not pictured - I didn't add this until later, and I thought it was kind of a weird craving for something in a salad, but it was delicious!)

2 tbsp. Newman's Own Sesame Ginger dressing (also not pictured)


What you'll need to do:

For the squash

  1. I decided to just make the whole squash, and put the leftovers in the fridge for the rest of the week. To make the spaghetti squash, preheat your oven to 400 degrees F.

  2. Cut your squash in half (you can prick it with a fork and microwave for about 5 minutes to soften the skin if needed) and scoop out the seeds.

  3. Place squash, cut side down, in a baking pan filled with about 1/2 cup water.

  4. Bake until squash is soft (skin will give when you press on it), about 30-40 minutes, depending on squash size.

  5. Once cool enough to handle, scoop out the flesh using a fork to rake out strands.

  6. If you're in a rush, just wash and prick the squash and then microwave on HIGH until soft, about 10-15 minutes instead of baking.

  7. Next, you'll put your onion in a pan with a little bit of water and cook them until they become translucent. If your onions start to stick, just add more water.

  8. Season shrimp with lemon pepper, garlic powder, and cumin. I eyeballed mine, but made sure they were pretty well coated in seasoning.

  9. Once the onions are cooked, add in your shrimp. I used pre-cooked shrimp, so I added them in last second.

  10. Add in the 1 cup of spaghetti squash. Add a DASH of cayenne, seasoning salt, and more garlic powder if you wish. I like my food really garlicky.

  11. And you're done!


For the salad

  1. Well, I think we pretty much all know how to make a salad.

  2. I chop up my spinach so that I can get a good mouthful of everything.

  3. Dice 1/3 of a red bell pepper and add that to your salad bowl.

  4. Slice 1 stalk of celery, and add that to the bowl.

  5. I decided to heat up 1 stick of imitation crab meat, and put that in my bowl as well.

  6. Measure out your dressing, put it on top.

  7. Done!

For real guys, this was SO, so good.
