I'm so full from this that I literally think I'm going to explode. This whole plate of food was only 132 calories and I literally couldn't even eat it all! I ate maybe half of it!
This was my first time attempting to make shirataki noodles and I had heard a lot of mixed reviews about them. Moral of the story - don't knock it until you try it!
Before I get into the recipe, I think it's important for me to tell you exactly how to prepare the shirataki noodles. Without preparing them properly, they have a pretty foul smell, as well as a super rubbery texture.
Here's how to make sure you noodles turn out delicious!
I used the whole package of noodles, which is only 30 calories!
1. Drain the noodles - discard all the water. Place the noodles in a large sieve and wash well under running water.
2. Transfer into a pot with boiling water and cook for 2-3 minutes. This step is important for removing the unpleasant odor.
3. Drain the noodles and place on a hot pan without any grease or liquids. Fry over a medium-high heat for about 10 minutes. There will be a lot of steam and that's what you want to achieve - remove as much water as possible without drying them out. If they become too dry, they will significantly reduce in size. Using tongs, you'll need to turn the noodles to avoid that. This step is important for their texture.
4. When done, place in a bowl and have it ready for a stir-fry.
So now that you'll have your noodles done, here's what I did with the veggies.
What you'll need (or should I say, what I used, you can make this recipe totally your own with however much and whatever vegetables you want or have in your fridge!):
1/4 cup broccoli
1 cup cauliflower
4 spears of asparagus
1/4 of a red onion
2 cloves garlic
1 cup mushrooms
2 tbsp teriyaki sauce
1 tbsp low sodium soy sauce
Salt and pepper
What you'll need to do.
Chop up your vegetables into the size that you would like. Keep in mind that if you're using mushrooms, they so shrink up a lot!
Mince your garlic and throw that in a pan with your veggies. I added the salt and pepper here, and I eyeballed it but I would say about a cup and a half of water.
Put a lid on your pan and put it to medium/high heat and let those steam until your veggies are cooked but still have a little crunch. Mine took about 12 minutes!
By the time they were done, most of my water had evaporated. While it was warm I added the soy sauce as well as a tablespoon of teriyaki sauce.
I mixed it all up and added the other tablespoon of teriyaki on top! PRESTO! BAM! Done!
