Hey guys! I had some more fun in the kitchen today. I had this awful craving for tuna, especially tuna salad. And honestly, mayonnaise is a no no for me. I just can't get behind it! So I got to thinking about how I could make a healthier version of tuna salad, and this is what I came up with!
This recipe makes 4 "bombs" as I like to call them.
The whole thing is 56.5 calories, which makes each half of the egg right around 14 calories. Not too bad if I don't say so myself!
What you'll need:
2 eggs
1 can chunk light tuna, packed in water
1 stalk of celery
About 1/4 onion
Various spices (I used Lawry's seasoning salt, black pepper, garlic powder, cumin, cayenne pepper, and turmeric)
Mustard (optional, I didn't use any because of course, I didn't have any on hand)
What you'll need to do:
Gather your ingredients
Boil some water, and boil the eggs (about 12 minutes)
While the eggs are boiling, start chopping up your onions and celery. Make sure they are minced nice and fine!
Drain your tuna, and put it in a bowl.
Add the onions and celery to the drained tuna. I didn't end up adding as much as I had chopped up, but you can definitely go ahead and add it all! They add an awesome crunch!
Add your spices to the mix. I go a little crazy with spices because I've been doing a lot of research on turmeric, cayenne, and cumin, along with their major health benefits! But really, you can add whatever spices that you fancy.
This is also the point where if you want to use mustard, squirt some in as well!
Then, mixxxxx it up!
Once the eggs are done boiling, run them under cold water (this makes them easier to peel).
Cut the eggs in half the long way. Scoop out the yolk, and toss it. You could use it to mix in with the tuna, but that's too much fat for me, and adding them would obviously change the amount of calories in these guys.
Spoon the tuna mixture into the eggs. I got about 1.5 teaspoons in each egg. Again, you can always load it up, but the calories will be different!
Voila! I topped mine with some more black pepper and paprika, to make it look nice and pretty.
Note: I didn't say how much of your spices to put in because, well, I totally eyeballed mine. If I had to describe what I did, I would say I put a dash of everything in, but a little more cayenne and cumin. I also went pretty heavy with the garlic powder! You can add spices and taste as you go, and as I said earlier, use whatever spices you like! Tuna is kind of like a blank canvas to me.
Also, there is a lot of leftover tuna with this one! I put my extras in a tupperware container so that I can heat it up later, because then it'll feel like a tuna casserole! Maybe I'll even crunch up a few veggie straws to put on top so it feels like the real deal!
