Sorry I've been a little AWOL lately! It's a super busy time of year for me and I have had a lot going on!
I've been having this obsession with shrimp lately. I've been coating them with lemon juice and lemon pepper, and throwing them on my indoor grill since it's so cold outside! for 4 oz. of shrimp, it's only 50 calories! And shrimp have always been, and always will be, one of my absolute favorite foods!
I've been having fun with zoodles, too. It can be hard trying to find different ways to season or sauce them. Honestly, I was getting pretty bored with my usual tomato sauce, or garlic and onions, or whatever else I figure I can throw in them. Then at the grocery store, it hit me. I saw pesto mix and remembered the days when I was in high school, basically living off of the stuff. I took a look at the calories and thought, "Holy smokes, no way!" It just wasn't worth it. And that's where this pesto comes in! I'm just not a fan of using oil in my food. Since I've started clean eating, I can't tolerate the way it coats my mouth and the taste it leaves. Call me crazy, but this vegan pesto is just like the real deal.
Yield: About 1 1/2 cups
1 Tablespoon is 10 calories!
What you'll need:
1 1/2 cups Frozen Peas, thawed 1 Tbsp Lime Juice 2 cups Basil ¼ cup Lemon Juice
A little garlic if you'd like
What you'll need to do:
1. In a high-power blender or food processor, blend peas, garlic (optional) and lime juice until pureed and almost paste-like. 2. Add basil and slowly add lemon juice to process until smooth. You may need more or less lemon juice.
3. Mix it/put it on whatever you'd like!!
