No Oil Chicken Fajitas

So it's Saturday and I decided to have a little fun in the kitchen tonight. I just kind of started going to town throwing this and that in the pan, and I was SOOOO happy with the outcome!

However, this made it tricky to keep super close track of the calories in this dish, because I literally made sooo much (this was my meal prep for the next 3-4 days).

However, I can confidently tell you that this recipe made about 5 servings, and each serving was somewhere around 152 calories!


What you'll need:

  • 1 3-pack of boneless, skinless chicken breasts

  • 1 medium white onion

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 clove garlic

  • ~2 tsp fajita seasoning


What you'll need to do:

  1. Chop up all of your vegetables into the size that you would like

  2. This is optional, but I diced my chicken into cubes. You can use strips, or keep them whole if you want. However, that will change how you cook this dish!

  3. Throw your chicken in a pan with a little bit of water, so it won't stick. Let your chicken cook a little bit, and set it to the side.

  4. Throw your bell peppers, onion, and garlic into a pan, add some water, and let those go until they are tender.

  5. If there is extra liquid in the bottom of your pan, empty some of it out. I had a lot of liquid and didn't want to dilute the yummy fajita seasoning flavor!

  6. Put the chicken in the pan with your vegetables, and add fajita seasoning. Cook until your chicken is at a safe temperature (165 degrees F).

  7. And that's it! Absolutely delicious!
