Mushroom and Shrimp Cabbage Wraps

Heeeellllooooo! Yesterday I was feeling adventurous and decided to experiment with a wrap and some cabbage I had picked up. Honestly, yesterday was my "cheat day" and I didn't pay too much attention to how many calories are in these. I can confidently say that one wrap is under 70 calories though!

This makes about 6 wraps, depending on how much you want to stuff them!


What you'll need (or what I used):

~6 leaves of cabbage (depending on how many you make)

2 cloves garlic

1 package mushrooms

8 oz. shrimp

6 oz onions

~2 tbsp teriyaki sauce

A couple splashes of hot sauce

Non stick spray

Salt and pepper, to taste


What you'll need to do:

Take your head of cabbage and boil it until the outer leaves start to come off (mine took about 10-12 minutes, but it depends on how big the head is)


This part got me a little frustrated, but very carefully peel one leaf off of the head of cabbage at a time. I peeled off about 10 leaves, just to be safe. Set aside.


Throw the onion in a pan with a spritz of non stick spray, and I also added some water to the pan, about 1/2 cup to get the onions cooking on medium/high heat. Cook until translucent.


Add in the garlic, and stir until cooked. At this point I added salt and pepper to make sure they were seasoned.


After the garlic is browned, throw in your shrimp. I used raw shrimp, which cooks very fast. It really only needs a few minutes. If you're using already cooked shrimp, you will only need to heat them through! If you leave them go too long, they will become rubbery!


At the end, the mushrooms gave off a lot of liquid. I drained the liquid and added a couple dashes of hot sauce (I'm really a wimp about spicy things), and about 2 tablespoons of teriyaki sauce and let it heat through.


Once all of those delicious flavors are done melding together, turn off the heat and lay out our cabbage leaves.


Spoon in the shrimp and mushroom mixture, and roll that thing up like a burrito. You're done!


I've been eating these the past couple of days, and the leftovers are honestly better than when they first come out! Make sure when you boil the cabbage leaves, they're pliable enough to fold. Some of my cabbage was pretty hard, which made it kind of hard to get through. Lesson learned, and I'm happy I can share this with you! I forgot to take pictures along the way, so here are pictures of the finished product!
