Lemon Coconut Protein Balls

These soft and naturally sweet balls of lemony goodness are just 49 calories apiece. So when you snack on three, you'll be getting 3.3 grams of fiber and over seven grams of protein.

This recipe makes 24 balls!



What you'll need:

  1. 1 cup raw almonds

  2. 1 cup Medjool dates, pitted

  3. 1 serving vanilla protein powder (I used Vega Performance Protein; 41 g)

  4. Juice from 1 lemon (about 2 tablespoons)

  5. 1/3 cup unsweetened shredded coconut (for rolling)


What you'll need to do:

  1. Place almonds and protein powder in a food processor and process until a powder forms.

  2. Add dates and lemon juice, and process until dough forms.

  3. Roll into balls, then roll each into the shredded coconut.

  4. For a firmer consistency, store balls in an airtight container in the fridge.
