So I found this recipe on yummly, but wasn't too crazy about how many calories were in it. Here is the original:
(Sorry, I know it's a small picture)
What you'll need:
150 g firm tofu
Handful of bok choy or any of your favorite veggies
1 cup cooked brown rice
1 tbsp soy sauce
1 tsp mirin add more mirin, or any other sweetener, if you want a sweeter sauce
What you'll need to do:
Wrap the tofu in a paper towel and place it on a plate with another plate on top of the tofu to drain the excess water. Leave for about 10 minutes.
In the meantime, wash the bok choy and cook it in boiling water for about 2-3 minutes.
Drain the bok choy and serve it on a plate with the brown rice.
Heat some oil in a pan on high heat and cook the tofu until browned on both sides.
Pour the sauce over the tofu in the pan until the sauce has reduced/evaporated a little.
Serve the tofu on top of the rice and bok choy and drizzle the extra sauce on top.
This recipe is 458 calories, which isn't too bad, but I can do without the rice, or honestly the bok choy. I also didn't like that when you pan fry the tofu, you use oil. I don't know, I'm a little weird about oil. SO if this recipe is cool for you, awesome! But I tweaked a recipe to better fit what I wanted. Here's mine:
What you'll need:
3 oz. extra firm tofu
1 tbsp. soy sauce
1 tsp. mirin
What you'll need to do:
Wrap the tofu in a paper towel and place it on a plate with another plate on top of the tofu to drain the excess water. Leave for about 10 minutes.
Spray some nonstick spray into a skillet over high heat, and pan sear the tofu until it is browned on both sides
Pour the sauce over the tofu in the pan until the sauce has reduced/evaporated a little.
Enjoy!
This take on the recipe is only about 106 calories!
