Grilled Lemon Pepper Zucchini

Need I say more?

123 calories in 3/4 of a cup!


What you'll need:

  • 2 tbsp. olive oil

  • 4 zucchini, cut into planks

  • 1 lemon, zest and juice

  • 2 tsp. black pepper (adjust to taste)

  • 1 tsp. salt

  • 1 tsp. Italian seasoning

What you'll need to do:

  1. Place the zucchini in a bowl or Ziploc bag. Add the olive oil, lemon juice, lemon zest, pepper, salt, and Italian seasoning and toss to get everything coated. Let rest on the counter top for 20 minutes.

  2. When ready to grill, heat the grill over medium heat. Add the zucchini directly onto the grill. Cook for 3-5 minutes on each side until grill marks appear and zucchini easily lifts from grill. Roughly chop and serve.


You can always just sautee these in a pan instead of on the grill! I have a mini little indoor grill type thing that sits on my counter top that works great!
