And it's not even my birthday.
This recipe is a nice small batch one, it makes 6 squares, with one square being 52 calories.
What you'll need:
3 tablespoons Truvia
1/2 cup cake flour (200 calories)
Sprinkle of salt
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon cornstarch (5 calories)
1/3 cup regular vanilla yogurt, I used Light & Fit (37 calories, depending)
1 1/2 tablespoons liquid eggbeaters or egg-whites (12.5 calories)
1 teaspoon I Can't Believe It's Not Butter, "Lite" (13 calories)
1/2 teaspoon pure vanilla extract (6 calories)
10 white chocolate chips (20 calories)
1 teaspoon sprinkles (20 calories)
What you'll need to do:
Preheat oven to 350F.
Using a small blender or hand-held mixer, cream butter, Greek Yogurt and sugar/Truvia. After mixing for about 1 minute, add in egg and vanilla.
In a large bowl, mix together your dry ingredients, excluding sprinkles and chocolate chips.
Fold wet mix into dry ingredients, stirring well until all ingredients are combined.
Add in white chocolate chips and sprinkles, stirring carefully so that colors do not run through batter (it's just prettier this way, no worries if it does),
In a non-stick pan (I took a 9 X 9 pan and used about half of it, marking off other half with non-stick foil), press your dough into it.
Bake your bites for about 12 - 17 minutes, or until your dough is browned on the top, but not burnt on the edges. You may test to see if your dough is done by jabbing a toothpick through the center. If the toothpick comes out clean without wet batter, your bites have finished! Remember: dry batter is totally okay.
Remove your funfetti cake and allow it to cool before cutting it into six even-sized squares.
Top with additional sprinkles if desired.
