This recipe is so easy!

What you'll need:
2 cups asparagus
1 cup cherry tomatoes
1 cup baby carrots
1 zucchini, sliced
1 summer squash, sliced
1 red onion, sliced
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp garlic powder (or a clove fresh garlic)
1/2 tsp oregano
Salt and pepper
What you'll need to do:
Toss the vegetables with the olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.
Place in a grill basket or directly on the grill. If grilling directly, slice the veggies into larger pieces to make for easier flipping. Grill for about 5 minutes and either shake the grill basket or flip the veggies. Grill 4-5 minutes longer until tender.
Season with additional salt and pepper if needed. Garnish with a drizzle of olive oil, fresh herbs, or cheese.
