Easy Grilled Vegetables

This recipe is so easy!

What you'll need:

  • 2 cups asparagus

  • 1 cup cherry tomatoes

  • 1 cup baby carrots

  • 1 zucchini, sliced

  • 1 summer squash, sliced

  • 1 red onion, sliced

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp garlic powder (or a clove fresh garlic)

  • 1/2 tsp oregano

  • Salt and pepper

What you'll need to do:

  1. Toss the vegetables with the olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.

  2. Place in a grill basket or directly on the grill. If grilling directly, slice the veggies into larger pieces to make for easier flipping. Grill for about 5 minutes and either shake the grill basket or flip the veggies. Grill 4-5 minutes longer until tender.

  3. Season with additional salt and pepper if needed. Garnish with a drizzle of olive oil, fresh herbs, or cheese.
