So we all love a nice big salad. Sometimes I'm okay with using some lemon juice and vinegar, or whatever I think will taste good on what I'm eating. But I have found a way to make my OWN salad dressing, without all of the oil and chemicals that comes with a store bought salad dressing.
All of these salad dressings are under 50 calories per serving!
Each recipe makes 4 servings.
What you'll need:
Tamari Vinaigrette
1/4 cup tamari
1/4 cup balsamic or red wine vinegar
2 teaspoons Dijon mustard
1001 Islands
6 tablespoons silken tofu
3 tablespoons stone ground mustard
3 tablespoons ketchup
1 teaspoon freshly squeezed lemon juice
pinch of salt
pinch of freshly ground pepper
Agave Mustard
1/4 cup stone ground mustard
1/4 cup silken tofu
3 tablespoons agave syrup
pinch of salt, or to taste
pinch of freshly ground black pepper, or to taste
Strawberry Vinaigrette
4 large strawberries
1 tablespoon red wine vinegar
2 tablespoons agave syrup
pinch of freshly ground black pepper
Creamy Italian
6 tablespoons soft silken tofu
4 tablespoons water
2 teaspoons fresh squeezed lemon juice
1/2 teaspoons each garlic powder, onion powder, oregano flakes, rosemary flakes, basil flakes, and salt
pinch of freshly ground black pepper
Sesame umami
1/4 cup tamari or soy sauce
2 tablespoons toasted sesame seeds
2 tablespoons rice vinegar
2 tablespoons water
1 large clove finely crushed garlic
What you'll need to do:
Tamari Vinaigrette: Whisk and mix with salad.
1001 Islands: Puree using immersion blender or whisk briskly until smooth.
Agave Mustard: Puree using immersion blender or whisk briskly until smooth.
Strawberry Vinaigrette: Mix in food processor or pulse in high speed blender to retain texture if desired.
Creamy Italian: Puree tofu and water using a small food processor or immersion blender then pulse-blend in other ingredients to retain bits of color from herb flakes.
Sesame umami: Toast sesame seeds in skillet over medium-high heat until they pop, then grind seeds in spice grinder and whisk together with other ingredients.

Edit: because I am a balsamic junkie, I felt the need to add a no oil balsamic recipe for you also!
This recipe makes 1 1/2 tsp, which is one serving. And comes in right around 35 calories!
What you'll need:
2 tsp Balsamic vinegar 1 tsp Dijon mustard 1 tsp Nutritional yeast 1/4 tsp. Dried Basil (or other herbs) 2 tsp Water Salt and pepper, to taste
What you'll need to do:
To make the Oil-Free Balsamic Dressing: Use a small container that has a lid. Combine all ingredients. Place the lid on the container and shake until combined. Serve and enjoy!
Chef's Tip: You can swap out the basil for other dried herbs like thyme, parsley, oregano, and chives. You can even experiment with other mustard flavors like honey mustard, spicy brown, or stone ground.
