5 Ingredient 10 Minute Black Bean Burgers

This past week has been absolutely nuts! I have been on a roller coaster of different emotions and just trying to hang on for dear life to be honest. However, through all of my craziness, I've been doing some self reflecting.

My week started with seeing my parents who are going through a divorce, and I was surrounded by all of my favorite foods, and I definitely let myself indulge. Probably way more than I should have. I've been feeling so heavy and bogged down by all the food I ate, that I started to really think deeply about food, and how it affects our bodies. It was through all of this that I have made the decision to go vegan.

I really had no idea how many different meals you can make when you transfer over to a vegan diet! It has literally become so mainstream that there is nothing you can't do! I decided to ease into this by trying out Gardein's Mandarin Orange Crispy Chik'n to see if I could handle it.

Let me tell you.. I was in awe of how good these things were. And after spending all day looking at vegan recipes, I know that I can do this! So from here on out, the majority of my recipes will be vegan friendly! This is a recipe that I am going to try out tomorrow, and I'll let you know how it goes!

These "burgers" have 5 ingredients in them, and take only about 10 minutes to get from on the counter to in your mouth. And that's what I like to hear!

The recipe makes 4 servings, and 1 burger with no toppings is 162.3 calories!

What you'll need:

2 cups cooked and drained black beans (or use a 14.5 oz can)

1/3 cup Gluten Free instant oats (or 1/2 cup rolled oats pulsed in the food processor)

1 Tbsp steak seasoning

1 Tbsp coarse ground prepared mustard (or whatever you have)

2 Tbsp Gluten Free Ketchup

What you'll need to do:

1. Preheat the broiler on high and spray a baking sheet with cooking spray.** Mix all ingredients in a medium bowl; divide into four burgers or eight sliders. Bake first side for 6 minutes; flip and cook an additional 4 to 5 minutes or until browned.

2. Top with whatever you like!

**Check the label on the cooking spray to ensure it is gluten free.  It’s best to simply use an oil mister to be sure.
